Hi, I’m Kendra and I blog over at Simply {Darr}ling (formerly Adventures of Brad & Kendra). I’m an electrical engineer and use my blog and etsy shop to use more of the right side of my brain. My husband, Brad, is my high school sweetheart and we have been married for 7 years. We live just outside Seattle with our pets.

Fall is beginning here in Seattle and I feel like this is the perfect time to pull out the crock pot and come home to delicious meals. I wanted to share some of my favorite easy crock pot recipes with all of you today.

Crockpot Recipes

The easiest way to make shredded chicken for recipes is to use the crock pot and Kitchen Aid mixer. The chicken can even start out frozen! Simply throw it in the crock pot, cook it all day and then put in the mixer and turn it on for 15 seconds. Viola! Shredded chicken!

Chili is one of my favorite crock pot meals. I think one reason for that is because it creates a lot of food that can be either frozen or eaten for leftovers. I made this Pulled Pork Chili for a cook-off at work and it was a huge hit! I was sad that there weren’t any leftovers to take home. There is a hint a cinnamon that the pork pulls out nicely. I have no tolerant for spice so mine is very mild but it could easily be spiced up with some peppers.

Whole chickens tend to be cheaper per pound than other meats so they are perfect for people on a budget. The crockpot can cook these easily too! Earlier this year I attempted to “eat through the freezer and pantry” by not buying any new food until those two places had been cleaned out. I did pretty good and went about 6 weeks without going to the grocery store (we had a bunch of frozen and canned fruit and veggies so we still got those in our diet). I had a whole chicken in the freezer and came up with this honey chicken recipe which is delicious! Most, if not all of the ingredients should already be in your spice cabinet!

I’ve heard that you can make apple cider in the crockpot and I look forward to trying to make some this fall. I can’t wait to have the scent of cinnamon, vanilla and crisp apples drifting through the house.
